I absolutely love the Thai Chicken Soup below. It's simultaneously tangy (from the red curry paste), spicy, sweet (from the brown sugar) and nutty (from the peanut butter). It's also perfectly creamy from the coconut milk. We ate it with brown rice for a couple nights in a row and loved every spoonful! Next time, I want to have it with rice noodles as shown in the original blog photo below!
The Thai Chicken soup was a fast and easy dish to make (just slice an onion and a red pepper and some chicken breasts for prep). Beware that the beouf boeurguignon recipe below is not a fast and easy recipe, even though I often assume a slow cooker recipe is essentially handsfree.
For this recipe, you chop and dice garlic, celery, carrots, and slice two onions and a pound of mushrooms. You also need to cook bacon, sear the beef in batches, and pre-cook all the veggies.
However, more effort usually equates to more reward and so it goes with this classic French dish. It tastes of beef and wine and goes especially well with crusty bread.
